Academic calendar
The academic calendar shows the deadlines and scheduled events that are relevant to students, teaching and technical-administrative staff of the University. Public holidays and University closures are also indicated. The academic year normally begins on 1 October each year and ends on 30 September of the following year.

Learning outcomes
Module: IMPIANTISTICA ENOLOGICA
The course gives the fundamentals concerning methods and technologies used within wine production. The peculiarities and performances of each operation unit are given.
Module: TRATTAMENTO REFLUI E RIFIUTI
The module deals with the treatment and disposal of winery waste and wastewater. State-of-the-art technologies are presented and discussed together with the most used treatment systems. The course gives the fundamentals to manage the waste streams within the wine production.
Program
Module: IMPIANTISTICA ENOLOGICA
The main issues addressed in the course are:
- Introduction to the course and pre-requisites: material and energy balances, transfer of matter, energy and momentum, definitions, units of measure
- Assignment of grapes (weighing, sampling, discharge and transfer)
- Stemming and / or crushing, draining, protected atmosphere, materials handling (dynamic and positive displacement pumps)
- Pressing, the production of the must
- Fermentation technological parameters: mixing fulling, replacement and "delestage", temperature control (cooling system), controlled maceration
- Solid-liquid separation: static settling (and cold), flotation, centrifugation, conventional filtration and membrane filtration rotary vacuum
- Tartaric stabilization
- The heat balances, heat exchangers, refrigeration systems
- The bottling line
Module: TRATTAMENTO REFLUI E RIFIUTI
Basics about the current legislation in Italy concerning winery waste and wastewater.
Types and flows of waste water: definitions of technical terms. Production of water discharge in the winery operations: quantity, physical, chemical and biological characteristics.
Critical analysis of viable options for disposal: spreading, treatment and discharge, treatment and reuse
Treatments of waste water. Objectives and methods. Unit operations in the treatment of physical, chemical, biological and advanced treatment. The activated sludge processes, the membrane bioreactor, the immobilized biomass reactors, anaerobic treatment processes. Biological nitrogen removal, nitrification, denitrification. Bio ¬ logical phosphorus removal. Combined biological removal of nitrogen and phosphorus. Removal of nutrients for via chemical physics. Phosphorous removal by chemical means.
The winery waste
Quality and quantity of waste, their classification (EWC codes). Fundamentals on disposal processes and technologies
Examination Methods
Module: IMPIANTISTICA ENOLOGICA
The final exam consists of a written work concerning both the theoretical part and the resolution of numerical exercises for the sizing of the main unit operations
Module: TRATTAMENTO REFLUI E RIFIUTI
The verification of the acquired knowledge is determined by means of a written test, including the dimensioning of a winery wastewater treatment plant or its parts.
