Wine identity and typicality (2022/2023)
The teaching is organized as follows:
Learning objectives
The student will have to
- know the main chemical and biochemical markers for wine varietal and geographical identity and typicality
- be able to manage the main winemaking variables connected to wine varietal and geographical identity and typicality, in relationship to the different models illustrated
- know analytical methodologies
At the end of the course participants will have acquired knowledge on the manage wine typicality and identity from production to commercialization.
Prerequisites and basic notions
Knowledge in the fields of wine chemistry and microbiology, winetechnologies and oenography are required
