The teaching program includes the following topics:
1. basic concepts concerning pro-technological microorganisms: starters, added cultures, protective cultures and probiotics.
2. Approaches for the selection and production of microrganisms for the development of innovative products.
3. The health aspects of probiotics and prebiotics with a regulatory framework.
Bibliography
Didactic methods
Lectures in the classroom and discussion of specific articles. Multimedia materials (videos) may be used to view before specific lessons in order to then be able to discuss them in the classroom.
Learning assessment procedures
The exam consists in the discussion of a project created and/or feasible in the laboratory concerning the use of microorganisms to achieve specific objectives of sustainability and innovation. The discussion will include the preparation of a presentation (eg powerpoint) of about 15 minutes and a subsequent discussion in relation to the contents of the course connected to it.
Evaluation criteria
The evaluation criteria are: - degree of study of the topic; - completeness and understanding of the information reported; - language skills; - ability to make connections between different topics relevant to the chosen theme; - reasoning skills (e.g. hypotheses for setting up experiments/studies).
