Program

Notes on the reference legislation; introduction to prevention and control models - definition of model and method, mandatory systems and voluntary certification systems; traceability pursuant to Reg.CE 178/02 - definition, purpose and control models; HACCP system and food self-control: health and hygiene prerequisites (Annex II - Reg.CE 852/04) - 7 HACCP principles - structure of the Self-control Plan/Manual - control procedures and forms as an application and validation method; pest monitoring - control models and methods; Labeling and management of food allergens (Reg. UE 1169/11).

Classroom lesson with material support (texts, slides)

Learning assessment procedures

Written exam: open-ended questions on topics covered during the lessons. Structured test aimed at assessing the student's knowledge of the topics covered for their application in the professional field. 3 open questions of 10 points each (30/30).

Students with disabilities or specific learning disorders (SLD), who intend to request the adaptation of the exam, must follow the instructions given HERE

Evaluation criteria

The student must demonstrate that he/she has understood the notions of a food self-control system applied to companies that handle, process and/or distribute food.
