Learning outcomes
The module examine the methodology of application to the legislation on food safety.
During the course some support models will be proposed to Food Sector Operators with reference to different types of food businesses.
The main voluntary certification systems currently required by the distribution market such as ISO 22000 will also be analyzed; BRS and IFS.
Program
Reference to the reference legislation;
introduction to prevention and control models - definition of model and method, mandatory systems and voluntary certification systems;
traceability pursuant to Reg. CE 178/02 - definition, purpose and control models.;
HACCP system and food self-control: the health and hygiene Prerequisites of Reg.CE 852/04 - definition and management methods, reference to the 7 HACCP principles, structure of the Plan / Manual, operating procedures as a method of applying and validating correct sanitary hygiene practices;
pest control;
Label food product (Reg. UE 1169/11);
Standard management systems: introduction to certification standards, ISO 9001: 2015, ISO 22000: 2018, BRS /IFS.
