Program

In this module students acquire basic knowledge in the field of nutrition and dietetics. The acquisition of skills covers the topics of:
The principles of nutrition in the healthy subject:
- the basic concept of metabolism and energy
- the LARN (Reference Intake Levels of Nutrients and Energy for the Italian population)
- the Mediterranean diet
- the sustainable diet
Macronutrients:
- Carbohydrates:
- physiology of absorption of various carbohydrate sources
- Carbohydrate malabsorption: fructose and lactose intolerance
- Dietary management in the diabetic patient
- Dietary fibre:
- soluble and insoluble fibre
- diverticulosis and diverticulitis
- Protein:
- physiology of absorption
- gluten malabsorption - celiac disease: nutritional therapy
- Lipids
- physiology of absorption
- nutritional therapy in hypercholesterolaemia
Oxidative stress
Micronutrients:
- fat-soluble vitamins: vitamin A, vitamin E, vitamin D, vitamin K
- water-soluble vitamins: vitamin B1, vitamin B12, folic acid, vitamin C
- minerals: calcium, phosphorus, iron
- electrolytes: sodium and potassium
Nutritional strategies: oral nutritional intake, food supplements and enteral nutrition formulas
Nutritional approach in:
- refeeding syndrome
- malnutrition
- cardiovascular diseases, obesity and metabolic syndrome, bariatric surgery
- hepatopathies (NASH and liver cirrhosis)
