Learning objectives
1. Unit operations in food technologies
Aim of the course is to provide the students with the basic knowledge of the unit operations involved in the production of a food item. At the end of the course, the student will be able to break up a productive process into the various subset of unit operations, to select the most appropriate ones and to identify and manage the fundamental process parameters.
2. Unit Operations Laboratory
In order to acquire the skills needed to manage each unit operation and a whole production process, the students will solve numerical exercises related to production problems that they might face in the real industrial life.
Prerequisites and basic notions
In order to understand most of the topics, it is strongly advisable to have passed exams in mathematics, physics and general chemistry.

Criteria for the composition of the final grade
The oral examination comprises questions related to the subjects outlined in the curriculum. To successfully pass the examination, students must demonstrate a comprehensive understanding of the topics and an adept use of technical terminology. The grading system is based on thirtieths, with a passing level set at 18/30).
