Learning objectives
To allow students to learn practical skills in a protected environment. They should learn how to sample food matrices for chemical and microbiological analysis.
Prerequisites and basic notions
Knowledge of the following food industry regulations:
Regulation (EU) 2017/625;
Decreto Legislativo n. 27 del 2 febbraio 2021 (Legislative Decree no. 27 of 2 February 2021).
Program
The course will introduce the students to all the elements of food sampling (tools,materials,procedures). There will be also practical exercises on the procedures for the sampling of food products for microbiological and chemical analysis.
Bibliography
Didactic methods
Brief intrductory lecture.
Practical demonstration of the different types of sampling. Practical exercises performed by students alone or in small groups.
Learning assessment procedures
100% attendance is mandatory.
The skill level of the students will be tested to verify the capacity to apply the learned concepts in an internship setting.
Evaluation criteria
Students will be tested on their ability to carry out the sampling of a food matrix and on the writing of an official sampling report, as well as an inspection report.
Criteria for the composition of the final grade
The final evaluation is a pass-fail exam, therefore no numerical grade shall be provided.
