Learning objectives

1. Unit operations in food technologies
Aim of the course is to provide the students with the basic knowledge of the unit operations involved in the production of a food item. At the end of the course, the student will be able to break up a productive process into the various subset of unit operations, to select the most appropriate ones and to identify and manage the fundamental process parameters.

2. Unit Operations Laboratory
In order to acquire the skills needed to manage each unit operation and a whole production process, the students will solve numerical exercises related to production problems that they might face in the real industrial life.
