Program
During the exercises the student will be able to deepen the analysis of the quality and pre-technological aspects of selected microorganisms such as probiotics or starter cultures, both eukaryotes and prokaryotes. In particular, the activities will focus on the phenotypic and molecular analyzes of safety characteristics (e.g. antibiotic resistance), production of bioactive compounds (e.g. bacteriocins) and evaluation of the fermentative capacity of the examined strains (set up of microfermentations and analysis of dominance and traceability)

Lessons will be held in the laboratory and in Italian.
Learning assessment procedures
At the end of the exercises, the students will have to write a report on the activities carried out in the laboratory. The evaluation of the report can be worth up to 2 points on the outcome of the final exam of the course.
Evaluation criteria
The main evaluation criteria of the report include: - understanding of the topics covered during the exercises - contextualization of the experiments faced - precision in drafting the report
